Sweet, Nutty, Creamy Artisan Cheese
Our aged farmstead cheese is crafted with raw milk from our small herd of hay and grass-fed Jersey cows. Cheese wheels are pressed, brined, dried, and allowed to develop a natural rind which is hand brushed throughout aging. Hassiago is our take on an Asiago-style aged hard cheese. It's the only one of its kind produced in the state of Arizona. We age Hassiago for a minimum of four months to achieve a distinctive buttery, nutty, complex flavor that pairs brilliantly with a variety of wines and foods.
