Sweet, Nutty, Creamy Artisan Cheese
Our farmstead cheese is handcrafted in small batches with raw milk from our Jersey cows.
We prefer to share this medium hard, aged cheese at 4 to 5 months for a full flavored, more buttery texture than traditional longer-aged Asiago cheese. Our customers use Hassiago grated in recipes, melted on sandwiches, and as individual slices on cheese plates.
Creamy, salty, mild Hispanico is softer than Hassiago. It's a great snacking cheese.
COW'S MILK MANCHEGO
Creamy, mildly sharp, and nutty flavors make our Manchego another good choice for cheese flights. It is medium hard.
